This light & refreshing summer mousse is perfect for any health conscious person who wants to enjoy something sweet, but doesn’t want eat refined carbohydrates.
- 450 grams Raspberries
- 1 can of coconut milk
- 1 Avocado
- 1 Vanilla pod
- 1 tablespoon of maple syrup
- 2 tablespoons of natural almond butter
Wash & place the raspberries in the food processor.
Scoop the avocado flesh out of the skin & remove the stone. Scrape the vanilla seeds out of the pod & place in the food processor, along with the rest of the ingredients. Whizz together until you have a light smooth pale pink mousse.
Pour into a container & leave in the fridge for an hour. Serve with fresh raspberries and my delicious creamy coconut ice-cream.

It is high in fibre & an excellent source of vitamins C & E, along with iron, selenium, calcium & magnesium.
Almond nut butter contains healthy fats & fibre as well as vitamin E, magnesium, calcium, & copper. The natural almond butter I use is free from sugar, and the one I use is free hydrogenated fats & other additives.
Avocados are rich in carotenoids & lycopene which are important antioxidants. Avocados also supply us with omega 3 fatty acids, in the form of linolenic acid. The monounsaturated fat can help lower cholesterol & improve heart health. Avocados contain many essential vitamins & minerals including vitamin B5, K & fibre, magnesium, iron & potassium.
