Sweet, refreshing, Raw Cheesecake, brimming with essential minerals, vitamins and heart-friendly mono-unsaturated fatty acids

Ingredients

CRUST

  • 1 cup of macadamia nuts.

  • ½ cup of walnuts

  • ½ cup of majool dates

  • 1 pinch of sea salt

  • ¼ of desiccated coconut

WHITE CHEESE CAKE FILLING

  • 2 cups of cashew nuts

  • 2/3 cup of maple syrup

  • 2 cups of coconut oil

  • 1 tablespoon vanilla essence

  • ¼ cup of water- if required

FRUIT TOPPING

  • 2 cups of frozen mixed berry fruits

  • ½ cup of majool dates


This is such a delicious and satisfying dessert and it is packed full of flavour, fibre, protein, and good oils. It doesn’t contain any diary, saturated fat or gluten and you can completely and genuinely enjoy without any guilt.

Instructions

Start by processing the nuts and then add the rest of the crust ingredients until your base looks light and airy.

Place your processed crust mixture into the bottom of a cake container spreading it evenly with a spatula. It is best to use a container with a removable bottom section.

For the middle white section, place all the ingredients into the food processor and allow it to become a sticky smooth consistency. Only add the water if your mixture needs additional liquid to reach the desired consistency. Use the spatula to spread this section evenly.

Place in the freezer to set while you prepare the fruit topping.

Simply place all the fruit topping in the food processor for a couple of minutes until you achieve a soft spreadable consistency. Spread evenly over top and place in the fridge to set for a couple of hours. Add fresh strawberries and blueberries with a sprinkle of raw coconut for a garnish.

This dessert is completely raw and only takes 10 minutes to prepare. Its dairy free, packed full of protein and fibre along with containing good quality oils.

It will leave you feeling satisfied without feeling bloated and it is easier to digest than a traditional cheesecake.

The ingredients in this cheesecake starting from the macadamia and walnuts have a sweet taste as well as being a rich source of energy and they are packed with minerals and fibre. They are a rich source of mono-unsaturated fatty acid, which is known for lowering total (bad) cholesterol and increasing HDL (good) cholesterol levels in the blood.

They are an excellent source of calcium, iron, magnesium, manganese, and zinc. As well as selenium and B-complex vitamins. They also contain small amounts of vitamin A and E.

The fruit and majool dates provide a light natural alternative to a traditional artificial syrup topping you would normally find.
