Guilt free, delicious carrot and apple cookies

Ingredients

  • 250 grams of oats

  • 3 ripe bananas

  • 150 grams of sultanas

  • 2 carrots

  • 3 red apples

  • 3 table spoons maple syrup

  • 3 tablespoons of natural nut butter

  • 1 tablespoon of coconut oil

  • 1 tablespoon of ground ginger

  • Serves 25 cookies


These cookies are packed with natural flavour & fiber. They are a healthy satisfying snack to have ready when you crave a sweet healthy treat.

Instructions

  1. Heat the oven to 200 degrees and peel & mash the bananas in bowl.

  2. Grate all the carrots & apples with their skins on.

  3. Place all the ingredients in one bowl & mix thoroughly together.

  4. Then separate into individual cookie portions & place on a well coconut oiled tin foil or grease proof paper & cook for 30 minutes, until lightly golden in colour.

 Benefits

Carrots are a root vegetable full of beta carotene & fiber. They are a great source of antioxidants, vitamin A, C & K & vitamin B & C, folate, potassium, iron, copper & manganese.

Apples are an extremely rich in important antioxidant flavonoids & dietary fiber.

Sultanas are a good source of energy & B vitamins, electrolytes & minerals. When seedless grapes are dehydrated to produce sultanas, the nutrients become more concentrated & absorb the flavour of the apple & carrots in this recipe.

 

Natural nut butters are a fantastic alternative to peanut butter & don’t contain the unhealthy saturated fats. This makes them a great protein source when consumed in moderation.

These cookies are easy to make, guilt free treat, which you will want to make over & over again.
