Sweet Potato Coconut Curry

 

Ingredients

  • 1 Butternut squash

  • 2-3 sweet potatoes

  • 1 head cauliflower

  • Drizzle of olive oil

  • 1 tsp coconut oil

  • 2 onions chopped

  • 3-4 cloves of garlic, minced

  • 2 Tsp lemongrass paste

  • ½ cup vegetable stock

  • 2 tins coconut milk

  • 1 tsp turmeric

  • 4 tsp cumin (to your preferred taste)

  • 1 tsp of paprika (to your preferred taste)

  • Sea salt & black pepper to taste

  • Coriander, parsley, chilli flakes with pistachios to garnish (all optional depending on preference.)


This nourishing & macro-nutrient meal contains a healthy array of wonderful complex carbs & plant protein.

Instructions

  1. Preheat the oven to 180 degrees Celsius.

  2. Peel & chop the butternut squash & sweet potatoes & cut the cauliflower into florets. Place them on an oven tray with a pinch of salt & a sprinkle of cumin & paprika & drizzle with olive oil. Use your hands to make sure the vegetables are fully coated in all the herbs & put the tray in the oven for around 30 minutes, or until golden. Mix half way through for even results.

  3. While the vegetables are in the oven, heat some coconut oil in a large pan, add the chopped onion & minced garlic & sweat over a low heat. This could take up to 15 minutes.

  4. Take the vegetables out of the oven & add to the pan, coating in the oil & paste, then add the coconut milk, stock, lemongrass, cumin, turmeric, & salt & pepper. Mix well & leave to simmer for around an hour, stirring often to stop it sticking.

  5. Once ready, garnish with fresh coriander, parsley, chilli flakes & pistachios, serve with brown rice & additional vegetables of your choice.
