Sweet potato, lime and coconut soup with chilli and crispy shallots
Ingredients
Tablespoon of coconut oil
1 medium red onion, chopped
2 teaspoons of grated ginger
1 kg sweet potato
750 ml vegetable stock
400 ml coconut milk
1 tablespoon of lime juice
1 tbsp. of chopped lemon grass
1 bulb of garlic chopped
Fresh coriander to garnish
1 large red chilli finely chopped de-seeded
1 shallot
This makes such a delicious, nourishing, soup & perfect seasonal dish for vegans & gluten free.
Instructions
Heat the coconut oil in a saucepan , add the chopped onions & garlic cook
Till soft. Then add the chopped sweet potato & stock & bring to the boil. Turn down to simmering add the chopped lime grass, lime juice
Remove from the heat. allow the mixture to cool before adding the coconut milk & then either pour into a food processor or use a hand held processor until you have a smooth consistency.
Serve & garnish with coriander fresh chilli & crispy shallots.
