Coconut milk Chai Tea
Chai tea has many beneficial properties & is rich in antioxidants. The spices in chai have been used for thousand of years to promote general health & well being, as well as supporting the treatment of various aliments. According to Ayurvedic philosophy the spices in chai tea are considered to be calming, vitalising, mentally clarifying & rejuvenating.
Ingredients (serves 4)
10 whole green cardamom pods, lightly crushed
5 whole cloves
3 stars of anise
2 cinnamon sticks
1 piece fresh ginger (about 2 inches peeled & finely chopped)
½ vanilla bean, split lengthwise & scraped
4 bags black tea.
½ cup of maple syrup or sweetness to taste.
1 ½ cups of milk
3 cups of water
Instructions
Place 3 cups of water in a saucepan. Add cardamom, cloves, cinnamon, ginger, star anise & vanilla bean. Bring to the boil & allow mixture to simmer on a low heat for around 15 minutes.
Place tea bags into pan with the infused chai mixture & remove from the heat & allow the mixture to steep for 3 minutes.
Strain the tea through a fine strainer into a serving pot.
Whisk maple syrup into the coconut milk & heat in the same pan & stir to combine with the chai mixture.
Serve immediately with added maple syrup to your preferred desired sweetness.
