Vegan stuffed mushrooms
Ingredients
1 ½ Ibs mushrooms, you can use portobello, cremini or button mushrooms.
2 tablespoons of extra virgin olive oil.
2 cloves of garlic, finely minced
1 small shallot, finely chopped
¼ cup of sweet red pepper, finely diced
1 cup of spinach, finely chopped
¾ cup of walnuts, roughly chopped
¾ cup of toasted pine nuts
Sea salt & black pepper to taste
I slice of gluten free whole meal bread
2 cups of mushroom broth
2 tbs of brewers yeast
This is such a fabulous alternative recipe for anyone wanting to have something really delicious on Christmas day & its also gluten free.
Instructions
Preheat the oven to 150 degrees
Wash & Remove the stems from the mushrooms, set aside & chop all your ingredients.
Brush the mushrooms with olive oil & place in the oven for 5 minutes to heat through & allow them to start to tenderize.
Mix all the ingredients into one bowl & making the bread into breadcrumbs using your hands to crumb the mixture then add the mushroom broth.
Fill each mushroom generously & continue to cook for 7 minutes or until the whole mushroom is completely cooked through. Please note that the mushrooms with shrink in size while cooking.
Remove the mushrooms from the oven & keep any of the liquid from your cooking as it helps to make delicious vegan gravy.
Top generously with brewers yeast & serve.
