Gluten and grain free Bread rolls

Ingredients

  • 1.5 cups of blanched almond flour

  • 0.75 cup Arrowroot powder

  • 0.25 cup flax seeds

  • 0.25 cup of sunflower seeds

  • 0.25 cup of pumpkin seeds

  • ½ teaspoon celtic salt

  • ½ teaspoon baking powder

  • 4 Eggs

  • 2 teaspoons Xylitol

  • 1 teaspoon Apple Cider Vinegar


These easy to make gluten free, yeast free bread rolls are fluffy, filling & delicious.


Instructions

  1. Sieve all the dry ingredients together.

  2. Beat the eggs for 3-5 minutes until pale & fluffy. Add the apple cider vinegar.

  3. Fold in gently & thoroughly the dry ingredients.

  4. Use a tablespoon to mould into individual bread rolls. According to your preference place additional seeds on top of the rolls before cooking in the oven for 12 minutes on 150 degrees celsius. This recipe also can be put into a loaf tin & cooked for 30 minutes to make a delicious loaf of bread.

Almond flour is gluten free & highly nutritious because its in high in protein & low in carbohydrates & sugars with a low glycemic index.

Arrow root is a starch rich gluten free thickening agent which is often used in food preparations for celiac patients. It’s a good source of B vitamins & minerals such as copper, iron, manganese to name just a few. It is also a excellent source of potassium which is an important component of cell & body fluids that help regulate heart rate & blood pressure.

Seeds are a fantastic source of magnesium, zinc & plant based omega 3 fatty acids.

I used xylitol as my it has a low Glycemic index & makes a good substitute, along with stevia.

However xylitol only has a negligible impact on blood sugar & insulin levels. Which means no sugar related highs & lows or no subsequent cravings for more carbohydrates or sweet foods. Therefore no adrenal fatigue, increased cortisol levels or weight gain. Xylitol is the only sweetener that doesn’t feed yeast, has anti-microbial effects & has an alkalizing effect on the body.

Apple cider vinegar is not only alkaline on your body but research has proven it can increase your insulin sensitivity which is fantastic for diabetes.

These rolls taste particularly delicious on the same day of baking & even better while still hot.
